Chicken shawarma

This oven baked chicken shawarma tastes just as good as done on the barbeque and much easier to make!

ingredients

1.5 kg chicken thighs, skinless and boneless

1 tsp cumin

1 tsp ground coriander

1 tsp smoked paprika

1 tsp sweet paprika

1 tsp turmeric

1 tsp garlic granules

Lemon zest, from 1 lemon

Salt

Pepper

2 tbsp. cornflour

Olive oil, for coating

  • STEP 1
  • Preheat the oven to 180°C; set it to fan.
  • STEP 2
  • Chop chicken thighs in half and add to a large bowl.
  • STEP 3
  • In a small bowl, add all the spices, garlic, lemon zest, salt, pepper and cornflour and mix to combine.
  • STEP 4
  • Add olive oil to coat the chicken; then add the spice mix and mix to combine with your hands, wearing latex gloves.
  • STEP 5
  • In a loaf or cake pan, layer up the chicken and press well, so that you get the same layered effect of kebab.
  • STEP 6
  • Bake for 60 minutes. Remove from oven, flip the pan onto a chopping board and shred the chicken. Serve with warm pitta bread and tzatziki.
